BOLD & VENTURESOME, RICH & ALLURING

96 points (Gold)  - James Halliday, Wine Companion 2018

Named after the Austins’ first son, Spencer Shiraz represents the pinnacle of fine wine within our collection. An elegant cool climate wine, Spencer Shiraz is deep, brooding and herbaceous. Aromas of dried herbs, clove and white pepper spices pop to start, followed by supple fruits like dark plum, blackberry and raspberry. The fruit scents continue onto the juicy palate, with a hint of rich dark chocolate. It finishes long and dry with fine, savoury and assertive tannins.

Each six pack includes free delivery Australia-wide.

Vintage Conditions

A textbook vintage allowed Austins to produce a plentiful amount of quality fruit. A dry winter saw an early start for budburst, though a cold spring spell eased the growth and the mild weather continued for almost the entire season, allowing the growth cycle to realign and extend ripening allowing the fruit to ripen perfectly. 2015 vintage commenced on 28 February with Chardonnay with the PT23 clone Shiraz harvested a couple of weeks later on 12 and 18 March under ideal mild conditions, with ripeness levels of 24 and 25 brix respectively. Geelong sees Shiraz ripening relatively quickly due to the vigorous nature of the Shiraz vine and Geelong’s sunny, dry ripening conditions.

Vinification
Our best selection of the Shiraz block was hand-harvested with a further run across a sorting table, ensuring only fruit of the highest quality was used. Fermentation at warm temperatures took place in a three-tonne open fermenter for one week, after which dryness was achieved. The wine was drained, and skins pressed. The wine matured over a 15-month period using a 500 litre puncheon and an 800 litre concrete egg. The wine exhibits intense varietal character in an outstanding vintage for the region.
The Austin's Vineyard

The Austins vineyard is located in Geelong’s Moorabool Valley sub-region, nestled between Geelong and Ballarat. The Moorabool Valley is steeped in history – some 20,000 years ago. It sat on the bottom of the sea only to be reclaimed as land by millennia of volcanic activity. The legacy is the tough limestone and basalt base which forms this sub-region’s unique terroir. Early settlers saw the potential of viticulture here and by the 1870s was the largest vineyard region in Australia. Richard and Pamela Austin purchased ‘Greenbanks’ in 1995 in the rolling hills of the Moorabool Valley with a single-minded vision to produce world class Pinot Noir, planting a 62-hectare vineyard in 1996, 37 hectares of which was Pinot Noir - one of the largest single plantings of Pinot in Australia.

Moorabool Valley’s cool climate is largely continental in nature, but moderated by its proximity to the ocean, providing the perfect conditions to grow world-class Pinot Noir and Chardonnay, as well as Riesling, Pinot Gris and not least, Shiraz.

The vines are planted north – south, trained vertically and the canopies managed to provide light and air into the fruit zone, maximising quality and vine health. Judicious irrigation is applied during the growing season to maintain healthy vines for ideal ripening conditions.

Awards and Ratings

96 points - James Halliday, Wine Companion 2018

James Halliday Review - The highest quality fruit selected, hand-picked and further sorted in the winery, wild-fermented in a 3-tonne open fermenter, matured for 15 months in a thick-staved 500ml puncheon and an 800l concrete egg. The deep crimson-purple hue stands out; a full-bodied wine of ultimate complexity, intensity and balance; blackberry, cracked black pepper, spices and licorice soar across the bouquet and palate. The puncheon has contributed an identifiable addition of cedar, that of the egg working with texture not flavour.

In a cool place is great! A constant temperate of 14 degrees is the optimal conditions. The most important thing is to have no sudden fluctuation in temperature. So, under the bed, bottom of a cupboard, in a cellar, etc. Not in an attic.

90% of our wines are proudly single vineyard (we source Prosecco and some Pinot Gris from the King Valley), meaning our wine is grown, produced and bottle onsite based out of our home in the Moorabool Valley. Read more about our vineyard here.

Tricky question as this is very wine dependent, although, luckily for us both, we make our wines ready to consume. For our red wines (Pinot Noir and Shiraz), you may gain some benefit from cellaring for up to 10 years in storage.
